SANDRAS CUSTARD FILLED CREAM PUFFS

These are very delicate
and tasty cream puffs that will make those

that you serve them to 
feel extra special...
Serves (8)
Prep: 20 mins. |
Cook: 40 minutes
--(+ standing time of 30 mins.)

INGREDIENTS:

---Puffs
-1 cup water
-½ cup unsalted butter
-1 cup all-purpose flour
-4 eggs

---Filling
(This is quick and easy – or feel free to make your own custard.)
-1 package (4-serving size) vanilla instant pudding and pie filling mix
-1 cup milk
-1/2 teaspoon vanilla extract
-2 cups whipping cream (un-whipped)

-Confectioners sugar, for dusting

METHOD

Preheat oven to 400 degrees.

In medium saucepan, heat water and butter to rolling boil. Stir in flour; reduce heat to low. Stir vigorously over low heat with a wooden spoon about 1 minute or until mixture forms a ball; remove from heat. Beat in eggs, all at once; continue beating until smooth.

On ungreased cookie sheet, drop dough by slightly less than 1/4 cupfuls about 3 inches apart while dough is still warm (its supposed to be sticky and paste-like). Bake for 35 to 40 minutes or until puffed and golden. Cool away from draft, about 30 minutes.

Meanwhile make the filling. In large bowl, beat pudding mix, milk, and vanilla extract with an electric hand-mixer on low speed until well blended. Add whipping cream; beat on high speed for about 2 minutes.

Once puffs are cooled, gently cut off the top third of each puff, and then carefully pull out any obvious strands of soft dough (but do not to take out too much or youll expose the bottom). Fill bottom of puffs with filling; replace tops. Sprinkle with powdered sugar, and serve immediately. ~ Enjoy!

TIP:  You can fill and/or top these puff pastry shells with a host of fillings or toppings to your hearts desire.

Cocoa Cream Puffs

Cream puffs! What else is there to say? Well, CHOCOLATE cream puffs, I should say. Oh baby. Of course; I dreamed up this idea, googled it, and discovered the rest of the world had been there before me. What else is new? Never mind. Plainly an idea whos time has come.  Rich and eggy (and chocolatey), but not too sweet - delicious!

Makes 12 to 24 cream puffs
1 hour prep time, 2 hours time to cool

Cocoa Cream Puffs

 Make the Puffs:
1 cup soft unbleached flour
1/4 cup cocoa powder
2 tablespoons sugar

1 cup water
1/2 cup unsalted butter
1/4 teaspoon salt
4 extra-large eggs

Sift the flour, cocoa and sugar into a small bowl and set aside. Put the water. butter and salt into a large pot and bring to a boil. When the butter has melted, and as the mixture boils steadily, dump in the flour mixture and stir vigorously with a wooden spoon,  until the mixture forms a smooth ball. Remove it from the heat, and let it cool for 5 to 10 minutes.

Preheat the oven to 400°F. Line a large baking tray with parchment paper.

Break the eggs into the pot, and beat them into the dough, one at a time. Make sure each egg is well incorporated before adding the next one.

Spoon the dough out onto the prepared tray, keeping them as well spaced as you can. If they are a bit rough on top, smooth out the dough with the back of a wet spoon, but dont flatten them out - keep them as high as you can.

Bake the puffs for 30 to 35 minutes, until firm. Let cool before glazing and filling.

Make the Custard:
1/4 cup sugar
1/4 teaspoon salt
6 tablespoons soft unbleached flour
2 extra-large eggs
2 cups milk
2 teaspoons vanilla extract
2 tablespoons unsalted butter

Sift the sugar, salt and flour into the top of a double boiler. Mix well. Beat in the eggs, until the mixture is smooth and lump-free. Stir in the milk.

Turn the heat on under the double boiler. Stir the mixture regularly, until it begins to heat up; at that point it must be stirred constantly until the mixture thickens. Once it is thick, remove it from the stove (and the double boiler.) Add the vanilla and butter, and continue stirring until well blended and smooth. Set aside to cool before filling the cream puffs. Note; while its not required to use an electric mixer to stir the custard, it does help to ensure a smooth, lump-free custard.

When both the puffs and the custard are cool, cut the puffs in half. (You can leave a "hinge" on one side.) Spoon enough custard into each open puff to fill it, and close the top back over the custard.  

Make the Glaze:
3 tablespoons butter
2 tablespoons milk
3/4 cup icing sugar
1/3 cup cocoa powder

Do not make the glaze until the puffs are filled and ready to be glazed. 

Put all the ingredients  into a small pot. Bring rapidly to a boil, stirring constantly. As soon as everything is melted and well blended, remove from the stove. Drizzle some of the glaze over each filled cream puff. Work as quickly as you can; the glaze sets very fast. Spreat it around with the back of the spoon if necessary.

Red Velvet Cupcake with Cream Cheese Frosting


Cream Cheese Frosting Ingredients:
Unsalted butter-250gms
Cream cheese-250gms
Powdered sugar-400gms
Pure vanilla extract-2tsp

Cake Batter Ingredients:
Maida/ All purpose flour-4cups
Unsweetened cocoa powder-2tsp
Baking soda-1 1/2tsp
Sugar-3 1/2cups
Salt-1tsp
Red food color- required
Eggs-3
Vegetable oil-1 3/4cups
Buttermilk-1 1/2cups
Pure vanilla extract-2tsp
Vinegar-1tsp


Method
Pre-heat oven to 350°F. Place the cupcake cups inside the muffin tray.
Sift together flour, cocoa powder, baking soda and salt. In a large bowl beat sugar, oil and buttermilk together with a electric mixer, gradually add eggs, vanilla extract, vinegar, food color and beat well. Next gradually add the sifted flour mixture and beat at low speed or fold it with spatula until well combined( do not over mix). Fill the muffin cups 3/4th with the cake batter. Bake the cupcakes until a toothpick inserted into the center comes out clean. Remove the cup cakes and place on wire rack until they are cooled. To make cream cheese frosting, beat the butter and cream cheese to a smooth paste with electric mixer. Gradually add the sugar and vanilla extract and beat until smooth and thick. Place a spoonful of frosting on a cupcake and smooth it to cover the top or add frosting to a piping bag and pipe frosting on cupcake to cover the top.
(Optional: I have decorated with dried Cranberry on top.)

Venison Medallions with Whiskey Mushroom Horseradish Cream Sauce

Ive been going to jury duty, so this recipe is a little late in coming. Our apologies. Just doing my civic duty... which isnt always fun. So, here you are.

Creamy, earthy and zingy, then add a touch of good ol American whiskey-- our Whiskey, Mushroom and Horseradish Cream Sauce is everything you could ever want in a good steak sauce. This recipe was inspired by a number of things. We basically took Ree Drummonds idea of a whiskey cream sauce, combined that with the concept of stroganoff and then added horseradish to reminisce the classic pairing of prime rib steak. And it really doesnt take too long to make.

Servings: 2
Prep Time: 5 minutes
Cooking Time: 15-20 minutes
Ingredients:
- venison tenderloin, enough for 2
- Kosher/sea salt, to taste
- freshly cracked black pepper, to taste

- 2 tbs. butter
- 1/2 cup onion, diced
- 1 cup button mushrooms, finely diced
- 1/2 cup of whiskey
- 1/2 cup of beef broth
- dash of salt
- 1/4-1/2 cup of sour cream, or to taste
- 1/2 tsp. of prepared horseradish, or to taste
- 1 tbs. of chives, chopped
- milk, a few tablespoons


Les ingrédients. Le whisky est particulièrement important. :-)
1. Clean venison tenderloin of all fat and silver skin. Then season with salt and freshly ground black pepper, to taste. Set aside to allow meat to come to room temperature.

At this point, you may want to start getting your grill ready. 
Chop mushrooms to get one cup. You want the mushroom pieces to be fairly small since it will be part of the sauce. 

Do the same with 1/2 cup of onion.
2. In a medium sauce pan or skillet, melt 2 tbs. of butter over medium heat.
Saute onion until its just about to brown. Stir frequently.
Then add mushrooms and continue to saute for another 5 minutes, or until mushrooms are cooked and liquids are evaporated. Stir in a pinch of salt. Stir frequently. 
Here comes the fun part!

3. So you dont burn your house down, turn off the burner for a moment. 
Carefully pour 1/2 cup of whiskey into the pan. Then turn burner back on to medium heat and simmer until alcohol evaporates, like in the photo. This should only take about a minute.
Once whiskey evaporates, turn the burner up to medium-high heat and pour in 1/2 cup of beef stock. Allow mixture to reduce by half. 

At this point, you can choose to scoop out half of the mushroom pieces. We did that for aesthetic purposes. Then we sprinkled those scooped out pieces over the finished dish to make it pretty. 


4. Then reduce heat to low. Whisk in 1/4 to 1/2 cup of sour cream and 1/2 tsp. of prepared horseradish, or to taste.

You may want to go stronger on the horseradish. Rick loves it, but Im not too fond of it so I only added 1/2 tsp. 
Whisk in a few tablespoons of milk to loosen up the sauce. Add salt and pepper, to taste. Stir in chopped chives. 
Remember to check on your meat on the grill. Ideally, you want the sauce and the tenderloin to come out at the same time. DO NOT OVERCOOK venison. Medium to medium-rare is bueno. 

Allow tenderloin to rest 5 minutes after taking off the grill. Then slice tenderloin into medallions.
Serve Whiskey, Mushroom and Horseradish Cream Sauce over medallions. We also served with grilled asparagus and mashed potatoes.
