FRIED DHAGA KABAB


Ingredients:
  • Beef mince ½ kg
  • Chopped green coriander 1 bunch
  • Fried onion 1
  • Egg 1
  • Cloves 2
  • Lemons 2
  • Bread slices 2
  • Green chilies 4
  • Small cardamom 4
  • Black peppercorn 4
  • White cumin 1 tsp
  • Poppy seeds 1 tbsp
  • Red chili powder 1 tbsp
  • All spice powder ½ tsp
  • Roasted pea 2 tbsp
  • Raw papaya 2 tbsp
  • Oil as required
  • Salt to taste
Method:
  • Grind together, 2 tbsp roasted pea, 1 tbsp poppy seeds, 1 tsp white cumin, 4 small cardamom, 4 black peppercorn and 2 cloves in the grinder. Add this grinded masala in ½ kg mince and 2 bread slices. Chop these things in the chopper. Add in 1 fried onion, 4 green chilies. then add in 2 tbsp raw papaya. Mic everything and keep it for 10 minutes. Make small kababs and shallow fry it in the pan. Put all the fried kababs in the pan and then add in 2 lemon jice, ½ tsp all spice powder, 1 chopped green chilies, cook it for 5 minutes then serve.

Fried beef chilies

Fried beef chilies


Ingredients
  • Undercut beef thinly sliced ½ kg
  • Salt ½ tsp
  • White pepper (for marination) ½ tsp
  • Sugar (for marination) 1 tsp
  • Soya sauce(for marination) 1 tbsp
  • Ginger finely chopped 1 tbsp
  • Egg half beaten
  • Corn flour 1 tbsp
  • Oil ¼ cup
  • Onion 2 large sliced
  • Green chilies 15 cut into halves
  • Spring onion leaves ½ cup 1 inch pieces
  • Oil ¼ cup
  • Garlic crushed 1 tbsp
  • White pepper ¼ tsp
  • Sugar ½ tsp
  • Salt ½ tsp
  • Soya sauce 2 tbsp
  • Lemon juice 2 tbsp
Method
  • Marinate the undercut beef with salt, white pepper, sugar, chopped ginger, soya sauce, corn flour ,a half beaten egg and ¼ cup oil. Mix well until all the ingredients are well combined.Deep fry the beef for 10 minutes till golden brown. Remove and keep aside.
  • Heat ¼ cup oil separately in a pan and add the crushed garlic, slightly fry till it turns golden.Add the fried beef with 2 sliced onions, green chilies, salt, white pepper sugar ,soya sauce and lemon juice. Mix well and remove.

Fried Tortilla with Parmesan Mashed Potatoes

These are perfect meatless hand pies for kids or adults. Its an easier and less time consuming version to Pirojki. What could be better? Mashed potatoes are mixed with herbs and cheese - is a really delicious combination. Then its fried in tortilla. Crispy and scrumptious! 




Ingredients:

12 uncooked flour tortillas
2 cups of Mashed Potato
1 tbs minced dill
2 tbs minced green onion
1 med caramelized onion
3/4 to 1 cup of Parmesan or cheddar cheese
Salt if needed
Black pepper to taste

Make Mashed Potato first than let it cool.
Peel 1 med onion and shop in small pieces. Saute onion until golden color (caramelized).
Mix mashed potatoes with herbs. If potatoes are too stiff add more milk to make em more soft and creamy.





Add cheese of your choice.

 Brush the ends of the tortilla with water.
 Add about 2 tbs of potato filling and spread.
 Pinch the ends with the fork.
Fry on med temp until golden color. 
Fry both sides. Use a paper towel to get rid of excess oil.

Paneer Fried Rice Indo Chinese recipe


This is a restaurant style fail-safe Paneer Fried Rice recipe, excellent main course for all occasions.
Paneer Fried Rice
Ingredients
Paneer( Indian cottage cheese)- 250 gms
Basmati rice( cooked)- 4 cups
Capsicum( Green Bell Pepper) medium size( thinly sliced)- 1 no
Onion( white) medium size( thinly sliced)- 1 no
Garlic cloves( minced)- 4 nos
Ajinomoto/ MSG- few pinches
White pepper powder- required
Salt- required
Oil- to deep fry
Butter- 2 tbsp

Indo Chinese Paneer Fried Rice
Method
Cut the paneer into bite sized cubes, deep fry paneer pieces in hot oil until golden brown and set aside.
In a large wok heat 2 tbsp butter, when butter starts melting add garlic, onions and capsicum, toss well on high heat for few secs.
Next add the cooked rice, fried paneer pieces to the wok. Season with ajinomoto, white pepper powder and salt.
Toss everything well until Paneer, vegetable and rice are well blended
( make sure not to break the rice). 
Remove fried rice on to a plate.
Serve hot Paneer fried rice with Gobi Manchurian or with Chilli Paneer.

My love hate relationship with Chinese restaurants my version of fried rice

We love eating out. My latest favourite Chinese joint is Dynasty on S.V. Road, Santacruz. For one, its close to home and secondly, the aroma of soy sauce and schezwan sauce beckons you inside. The only downside is that, on weekends there is a minimum wait time of 45 minutes, and they take reservations only upon arrival.

Its happened on so many Sundays that we end up going to a new place to eat, and on our way back, I say, Isse toh achcha hum ghar par hi khaate -Loosely translated, it means, we would have been better off eating at home. Either the food wouldnt be all that great or the server would have been off-putting. A Chinese meal at made at home is fast, flavourful and filling. Hows that for an alliteration?

A real super-fast menu would start with a Knorr Vegetable Soup modified into a lip-smacking Veg Mein Chow soup-ask me how? Actually Im all eager to share this idea with you. But more about that in some other post. The salad would be Ginto. Ok, ok, I admit this is Thai and not Chinese. But what the heck-it goes fantastic with the spicy soup. I think Ill write about this salad and soup together sometime.

Now on with the rice. Ive seen the kitchens in some of the Chinese restaurants, all in Bombay ofcourse. Havnent made the trip to China yet. I have been thinking if I will ever be able to make it, especially after hearing an episode where my vegetarian friend was served a little snake (yeah snake, not snack) all coiled up as a garnish on top of his veg rice. I didnt find that amusing at all..

Getting back to kitchens in Chinese restaurants, their Wok is filled with oil 1/4 th of the way to the top. They quickly dump in the customary green chillies, ginger and garlic, almost deep fry the veggies and add the cooked rice or noodles with the sauces. And all this happens while you were blinking. While I do like the tastes, this kind of cooking, doesnt do much for my health-conscious soul. If I wanted to eat deep fried food, Id go for a samosa guys, not fried rice.

Anyway, so thats how I end up making my own version of fried rice that tastes as good if not better and feels good to be eating too.

Feel free to use any vegetables you have on hand. The day I made this, I had some fresh green beans that I had stringed, cut and saved. So green beans fried rice it was. And because I always have onions and frozen peas on hand, it wasnt a bad idea to add those too.

I prefer putting in a whole lot of vegetables into the rice, so that each spoonful gives me almost as much of vegetables as much as rice. You may cut down on the veggies if they dont excite you much.




Chinese fried rice



Ingredients

2 cups cooked rice, separated with a fork( I used regular kolam-a short grained rice)
1 generous cup of finely chopped French beans
1/2 cup frozen green peas
2 medium onions halved and sliced

6 cloves garlic, 1/2" piece of fresh ginger, 3 green chillies- All finely chopped
1 T sesame seeds (This one makes the rice taste extra yum)

2 T dark soy sauce (adjust according to strength of sauce)
1 T vinegar
1/2 tsp of Chinese 5 Spice powder (Optional)

1 T oil (See I told you this was healthy! )
Salt to taste
1/2 tsp freshly ground black pepper


In a wok, heat the oil. Throw in the sesame seeds first. Once they start turning golden, put in the ginger, garlic, chillies. Saute for 30 seconds, dont let the garlic brown please.

Now, put the veggies in. Add a pinch of salt. Saute them for 2-3 minutes, until their rawness is gone but crunch is maintained. Mix in the rice, soy sauce, vinegar, spice powder, pepper. Check for salt and adjust.

You may garnish with freshly chopped coriander if you wish.

Eat just like that or with a salad.

Note:

~While making this may take a little more time than what the chef in your local Chinese take-away does, it is still very quick. The only effort is in cleaning and chopping the beans. If you have a pack of frozen beans-then this wont take you more than 10 minutes :)

~It is also a great way of finishing up left-over rice.

Green beans are a great source of Beta-Carotene, Vitamin C, copper and Manganese making it a super-anti oxidant food. I could go on and on about the benefits of this humble vegetable, but thats matter for my weekly column. After a long break, Id like to send this for Cates ARF Tuesdays.

Fried rice ball stuffed with cheese


Ingredients:
  • Boiled rice 200 grams
  • Finely chopped capsicum 1
  • Finely chopped tomatoes 2
  • Eggs 3
  • Finely chopped button mushrooms 4-5
  • Mozzarella cheese 1 packet
  • Bread crumbs 1 cup
  • Flour ½ cup
  • Finely chopped parsley ¼ bunch
  • Black pepper ½ tsp
  • Oil for frying
  • Salt as required
Method
  • Finely chop ¼ bunch of parsley, 4 – 5 button mushrooms, 2 tomatoes and 1 capsicum.Remove seeds of the tomatoes and chop finely.In a bowl put together 200 gm boiled rice, 1 egg, salt to taste, ½ tsp black pepper powder and all the chopped vegetables. Mix well.
  • Cut 1 packet of mozzarella cheese into small cubes.Make balls with the rice mixture. Insert your finger in each ball to make it hollow. Put 1 cheese cube in each ball and reshape again.
  • Coat each ball in ½ cup flour.Beat 2 eggs with a little flour. Dip flour coated rice balls in beaten egg and deep fry till golden brown and crisp.Remove from oil and serve with chili garlic sauce.

Celery and Bean sprouts Fried rice

If you are living in UK/USA, you are obviously craving for Indian food. I know everyone want to find the taste of home in every dish they eat. There are only few vegetables available in the grocery that are Indian such as egg plant, potato, cucumber, capsicum, oakra etc., and leafy vegetables like spinach and cilantro/coriander.

You can also use sprouted beans, celery, squash, parsley and other vegetables. If you do not like to eat celery in salads just throw them in fried rice and enjoy the delicious flavorful fried rice with little twist.

Ingredients:
Cooked Rice-4 cups(when measured with 160ml cup)
Mint leaves-4 springs
Parsely/Cilantro leaves chopped-10 springs
Celery- 1 stem chopped to fine pieces
Sproted beans handful washed and chopped to half
Pepper powder-1/2tbsp
Salt to taste
Coriander powder-1/4 tbsp
Soy sauce-2tbsp
Green chili-2
Bay leaf-2
Oil-2tbsp
Onions chopped-1/2cup
Lemon juice-2tbsp

Method:
Heat oil in a pan and add bay leaf, beans, celery, onions  and green chili. Saute until the raw flavor goes away. Then add coriander powder, soy sauce, salt and pepper powder. Give a quick saute until the all vegetables are well cooked under medium flame. Now add rice, mint leaves and cilantro and mix well. Cook for about 2min under medium flame and squeeze some lemon juice at the end and serve hot.

Fried rice with Chinese sausage

Fried rice is one of the staples in a Chinese restaurant. Every Chinese restaurant Ive been to have had at least one version of it, sometimes several different versions. For picking my first recipe on this blog, I figure it has to be a common and popular dish that is easy to do, what is better than fried rice?

Like I mentioned earlier, there are many different versions of fried rice. The variations between them are the ingredients and the cooking method. This version of fried rice Ive learned from a Chinese post on the Internet and it has instantly becoming my favorite version. What I love about this version is once finished, every rice grain is separated from each other, and mixed with golden egg pieces. The "mouth feel"/texture of the individual rice grains is filling, almost crunchy, which I prefer much more over the soggy texture. This dish is also very healthy too (). Okay, without further ado, here is the recipe for fried rice.

Fried rice with Chinese sausage

Serves 2

Prep time: 10 minutes
Cook time: 30 minutes

Ingredients:
2 eggs
Half of a medium onion, thinly sliced
1 links of Chinese sausage, thinly sliced
5 cups of cooked rice from the day before, loosensed by using a spetula
1 scallion, green part only thinly sliced

onion, Chinese sausage, eggs and green onion


Instruction:
  1. Separate the egg whites from the yolk, and beat the yolk
  2. In a medium sized pan, heat 1 tablespoon of peanut oil over medium heat, add in the onion. When onion is soft (about 5 mintues), add in the Chinese sausage and continue to cook for 5 minutes, then add in the egg white and cook for 1 minute.
  3. Meanwhile, in a wok, heat 1 tablespoon of peanut oil over medium heat, when the oil is hot but not smoking, add in the egg yolk, let it cook in the oil for about 30 seconds, then break it into pieces with your ladle or spatula.
  4. Add in the rice, using the back of the ladle to press the clumps of rice against the wok to break it apart. The goal here is to break up the rice into individual grains so we can have the crispy texture. Keep stir-fry and press the rice, and toss the rice and egg regularly to let the moisture built-up escape. When rice is sperated into individual grains and if you slow down, you can see the rice grains are jumping on the edge of the wok, then this means the rice is done, about 10-15 minutes.
  5. Now add in the cooked ingrindents from step 3 into the rice, and add salt to taste. Stir fry until everything is mixed together and turn off the heat. Add in the scallions and serve.

Beer Braised Baby Backs and Home Fried Onion Loaf

You may not realize it, but baby back ribs are a perfect meal to prepare for dinner, even when you plan on spending a busy day out and about running errands, chauffeuring the kids or just tearing up the mall.  While we all probably agree that ribs of all types are at their best when slowly smoked over a stoked fire for the better part of a day, they are also delicious when cooked low and slow in a crock pot or sealed in a foil packet and braised in some beer right inside your oven.

Beer Braised Baby Backs
1 rack baby back ribs
1/2 warm beer
pork dry rub
favorite BBQ sauce

Preheat the oven to a low 275 - 300 degrees. Cover a heavy duty shallow rimmed baking sheet with foil (for easy clean up) and place the ribs on the sheet.  Massage a liberal seasoning of pork rub into the ribs. Pour over about 1/2 beer, massage the ribs again and add more dry rub as necessary.  Brush on a layer of your favorite BBQ sauce and tightly cover the entire baking pan with foil.  Cook for about 3-4 hours, without opening the oven or sneaking a peek at the ribs.  After 3-4 hours remove the baking sheet, turn the broiler to high, take off top piece of aluminum foil and brush ribs with another coating of BBQ sauce.  Place the ribs under the broiler for just a few minutes to develop some caramelization and a few crunchy bits.  Enjoy with extra sauce on the side.  

In my opinion, there is not a more desirable accompaniment to ribs than an onion ring.  However, the onion ring is only made more perfect when transformed into a loaf and served with the zesty dipping sauce.  


Onion Loaf (mini version, serves 2)
1 onion sliced into rings
2 eggs
3/4 cup milk
1 teaspoon salt
1 cup of Bisquick mix

Preheat fryer oil to 375 degrees. Preheat oven to 400 degree. In a large mix bowl or even a giant zip lock bag, combine eggs, milk and salt and add onions.  Stir or shake to cover and let sit for about 15 min to 1/2 hour.  Coat onions in Bisquick mix by placing in a large zip lock bag and thoroughly shaking Bisquick and onions together.  Deep fry onions until golden brown.  Drain well and season with a little salt.  Place onion rings in a small (mini) loaf pan and firmly form in the loaf shape, but do not press down. Bake in the oven for 15 minutes and turn out onto a plate to reveal a deliciously, crispy onion loaf. 

Onion Loaf Dipping Sauce
2 tablespoons mayonnaise
1 tablespoon ketchup
1 tablespoon horseradish
dash hot sauce
sprinkling of seasoning salt

Combine all ingredients together in a mixing bowl.  Place in the refrigerator for at least 1 hour before serving to give flavors a change to combine.  Serve in individual little dipping bowls and garnish with another sprinkle of seasoning salt.  Fabulous with fries too!!!

Moo Shu Chicken and Sesame Stir Fried Sugar Snap Peas



Last nights dinner was a little Asian themed spread that I helped one of my clients prepare.  In addition to our take on Moo Shu Chicken, we also made some delectable Asian BBQ Shrimp Skewers and Citrus, Honey, Soy Baked Tilapia with Brown Rice.  All of which was gobbled up before I could get a photo.  If you are wanting to add some Asian flavors to easy weeknight meals, these dishes are great place to start.  Give them a try!

A bit unorthodox for sure, but we wanted to brush up on the techniques for grilling boneless, skinless chicken breast so this Moo Shu Chicken started with grilled chicken seasoned with salt and pepper and a bit of canola oil.  We grilled the chicken over medium heat so as not to develop too much color but to ensure they were thoroughly cooked.   After letting the chicken breasts cool until easily handled, we shredded the chicken into bite size pieces.  Meanwhile, in a very large skillet over high heat we stir fried 1 tablespoon of fresh ginger, 2 minced cloves of garlic and 1/2 bag of broccoli slaw and 1/2 bag of cabbage slaw for about 1 minutes.  Then, we added the shredded chicken, tossed well to combine and added sliced green onions, soy sauce, fresh squeezed lime juice and a drizzle of Hoisin sauce.  The chicken was already cooked through, so just a minute or two in the skillet to heat through and incorporate the flavors.   As a substitute for the traditional pancakes, we used a very, very thin flour tortilla (Azteca brand) which we heated until pliable, added a spoonful of Hoisin sauce and topped with the chicken and slaw mixture.  A little garnish of chopped green onion and it was a very tasty and healthy home cooked version of a Chinese restaurant favorite. 

I mentioned by current seasonal obsession with snow peas and sugar snap peas in a post earlier this month.  I love the crunchy sweet freshness of these peas and they are particularly delicious when enhanced with just a touch of sesame oil.  To prepare these beautiful sugar snap peas, we heat a large skillet with 1 tablespoon canola oil and tossed in the peas, which had already had that inconvenient little string removed, and stir fried them for a minute or two.  Then we added a dash of soy sauce and a drizzle of toasted sesame oil.  A really perfect celebration of Spring freshness!

Fried Wontons with Venison

Uh oh... another Asian dish with venison. Some may not agree with our veering off the beaten path too much, but deer exist all over the world. It tastes great, in all types of cuisines. One of the reasons why we made this blog is to show everyone how versatile venison can be. This is one of those examples. Instead of using pork, which is the traditional protein used in wontons, we substituted with venison. Although there really is nothing like a pork wonton because pork does have all that flavorful fat in it, venison wontons are a great healthy alternative. If calories isnt an issue and you are able to get ground venison with pork fat added to it, please do so. But by all means, for those who dont know, dont grind up your venison with its own fat. Rick says it tastes rather putrid and will ruin your meat. 

Servings: 4 appetizer servings
Prep Time: 20 minutes
Cook Time: 5-10 minutes
Ingredients:
- 1/2 lb. ground venison
- 1/2 tsp. sesame oil
- 2 green onions, white and light green parts thinly sliced
- 2 tsp. oyster sauce
- freshly ground black pepper
- pinch of salt
- 20-25 wonton wrappers
- 1/4 cup low sodium soy sauce
- 1 tsp. Caesar Vinaigrette with Parmesan 
- Sriracha sauce, to taste
- green onion, green parts sliced
- vegetable or peanut oil

1. In a bowl, combine ground venison, 2 sliced green onions, sesame oil, oyster sauce, ground black pepper (to taste) and a pinch of salt. Mix well.
2. Beat one egg in a small bowl. With a brush, brush egg around all four sides of the wonton wrappers. Add about 1 tbs. of the venison mixture in the middle of the wrappers.

You can buy wonton wrappers in the freezer or refrigerator section at your grocery store. 
To seal, fold opposite corners together. The egg helps the wrapper corners to stick. 
Then the other corners... making sure that you squeeze out all air bubbles.
They should look like this... little pyramids. 
3. Heat oil in a deep pan to 360 degrees. You can fill it up to submerge the entire wonton, or fill halfway. Youll have to do more flipping to make sure all sides are evenly fried, but youll save more oil this way.

Fry in batches until golden, turning occasionally, about 2 minutes. 

Drain on a paper towel. 

4. To make dipping sauce, combine together soy sauce, Caesar vinaigrette, chopped green onion and Sriracha hot sauce, to taste. Adjust ingredients to your liking. Mix well. It should be salty, but also balanced by the tartness in the dressing. 

If you dont have dressing, you can use lemon juice, starting off with a small amount and adjusting.

Ingredients

  • Chicken breast ½ kg
  • Carrot 1
  • Capsicum 1
  • Spring onion 2
  • Egg beaten half
  • Egg noodles ½ packet
  • Garlic chopped 4 – 5 cloves
  • Crushed black pepper 1 tsp
  • Brown sugar 2 tbsp
  • Lemon juice 2 tbsp
  • Corn flour 2 tbsp
  • Chili sauce 4 tbsp
  • Oil for fry
  • Salt to taste
Method
  • Boil ½ packet egg noodles and then fry with oil.Remove and keep aside.Cut ½ kg chicken into strips, marinate with 2 tbsp corn flour, salt to taste, 1 tsp crushed black pepper and half beaten egg.
  • Mix well and deep fry till golden brown.Heat 2 tbsp oil in a pan, add 4 – 5 cloves of chopped garlic and fry well.Now add 2 tbsp lemon juice, 4 tbsp chili sauce, 1 chopped carrot, 1 chopped capsicum, 2 chopped spring onion, 2 tbsp brown sugar and fried chicken.
  • Cook well. Spread on top of boiled noodles and serve.
