Beef and Spinach Keema Recipe
As you will be able to tell by looking at my blog, I totally love keema curries.
Keema is a curry made using minced meat that can be eaten with bread, dosa or rice.
Today I cooked a beef and spinach keema curry and it tasted fabulous. If you have never tried spinach in an Indian style curry then you really must as the combination of spices, onions and spinach is out of this world.
I ate mine with fluffy brown rice made using my pressure cooker.
Spinach is high in Vitamin C, Vitamin A, Folate, Magnesium, Iron and many more Vitamins and Minerals.
This recipe is really easy to cook with my step-by-step picture recipe guide to help you along the way.
You can add as little or as much chilli as you like, extra mushrooms also taste good in this recipe.
The smell of this tasty curry is amazing so remember to take in all those lovely aromas as you cook it.

Ingredients for Beef Keema Recipe
1 Pack Lean Minced Beef
1 Onions (chopped)
2-3 Garlic Cloves
2 Inch Fresh Ginger
1 Large Flat Mushrooms (chopped small)
2-3 Handfuls Fresh Spinach Leaves
1 Red Pepper (chopped small)
1 Cup Water
1 Tbsp Tomato Puree
Rapeseed Oil (or other vegetable oil)
1 Tbsp Dried Coconut or Creamed Coconut
For the Spices
1 tsp Chilli Powder
1/2 tsp Paprika
1 tsp Cumin Powder
1 tsp Coriander Powder
1/2 tsp Cayenne Pepper
1 tsp Turmeric
Pinch Yellow Mustard Seeds
Pinch Black Kalonji Seeds
Pinch Cumin Powder
Pinch Coriander Powder
Pinch Salt (optional)
Pinch Paprika

How to make Jeenas Kitchen Beef and Spinach Keema Curry Recipe
Place the chopped onion into a blender and blend into a paste.
Heat some oil in a large pan/wok and fry the onions on a medium heat stiring always for a few minutes.
Blend the garlic ginger and chilli.
Add blended garlic mixture with turmeric, mustard and kalonji seeds.
Cook for a few minutes stiring well.

Turn the pan heat off.
Take the curry base mixture from the pan and blend it into a thick paste.
You can add a drizzle of oil and a little splash of water to the mixture to held it blend together.
Now pour it back into the pan.

Turn the heat back on.
Add the cup of water, 1 tsp cumin, 1 tsp coriander, 1/2 tsp Cayenne, pinch methi leaves and 1/2 tsp paprika.
Stir well bring to the boil and simmer for a few minutes.

Add the tomato puree, red peppers and beef.
Simmer for 5-10 minutes chopping at the minced beef and stiring from time to time.

Add the coconut, stir well.
Add a pinch of paprika, cumin and coriander and salt (optional) with a drizzle more of oil.
Once your keema curry is cooked and thickened add the fresh spinach leaves.
It looks a lot of spinach at first but the leaves soon cook down a lot smaller and wilt.

Stir well and add fresh coriander leaves.
Only cook for a few minutes as coriander and spinach leaves cook very quickly.

Detox Green Soup Recipe with Broccoli Spinach and Ginger

I'm not perfect. Goddess knows. Especially during the long pale days of Winter. When I am a slug. Motivation is tricky to summon. I loll on the couch with my iPad and expend as few calories as possible, doing nothing more than watching House Hunters International as I read through your ever delightful comments. I scoop guacamole with homemade pecan crackers and conjure recipes for detox green soup as I follow tall young Cincinnatians ducking into tiny Italian kitchens the size of my corner sofa, daunted by the lack of plumbing but in love with the sun baked view of a tangled vineyard through open shutters. I mute the unintentionally absurd commercial for Cialis, trying to imagine why any woman over the age of fifty would even want to deal with 24-hour tumescence before I realize I have eaten a giant avocado.
All by myself.
I don't beat myself up. I know the bottom line. I didn't just fall off the turnip truck. I am not naive. Perfection is unattainable. No matter what the ad men tell you. And it's not perfection I seek. Though, in full transparency, I used to nurture an inclination toward seeking perfection
The thing about perfection is that no one cares.
And neither does your soul. In fact, your soul loves to throw a monkey headlong into your perfect plan. You know the monkey I'm talking about. The monkey who misses deadlines and loses car keys and eats an entire bowl of guacamole in one sitting (or laying down, as the case may be). So much for resolutions and diet strategies. Monkey WIN!
But just in case you're serious about cleansing those fat little liver cells and whittling away your holiday pie roll, I did make a detox soup. And yes, it was green. And cruciferously abundant in vegan veggie wonderfulness.
It made us feel happy.
And well fed.
Quite virtuous.
But not perfect.
Because perfection, Darling, is not only unattainable.
Perfection is highly overrated.

Spinach or Broccoli Quiche
This recipe was given to my by my good friend Dawn years ago. For more than 10 years this has been my go to quiche recipe that I love to bring to parties when I dont have the time to come up with something new. Its so quick and easy and there is no crust involved. This has been a huge hit over and over again for me. In fact, last week I brought this to my office on my birthday to share with my coworkers. This is the second time I brought this in and this time I remembered to pass out the recipe . Ive done this with Broccoli and Cheddar (and even mushrooms once) but my favorite is the spinach. In my rush to set everything up I forgot to take a picture of the quiche once it was sliced so I am posting a picture of my broccoli quiche that I had saved.
Broccoli/Spinach Quiche
Ingredients:
6 eggs beaten
2 packages frozen broccoli florets, defrosted (OR 2 packages frozen chopped spinach, drained well)
1 package of grated mozzarella
Parmesan cheese to taste (at least ½ cup)
1 ¼ cup bisquick
1 ¼ cup whole milk
1 small onion, chopped
2 cloves of garlic, chopped
Salt and pepper
EVOO
Directions:
Preheat oven to 350°.
1. Sauté onion and garlic in oil until softened add broccoli (or spinach) and sauté for about 5 minutes, set aside to cool. Drain any excess oil.
2. Mix together milk and bisquick. Add eggs, broccoli and onion mixture, mozzarella, cheese and broccoli; mix well.
3. Put in a greased pan and cook for about 40-45 minutes or until middle sets. (Can use two round pie pans or 1 large rectangular pan.)
