Smoked Turkey with Cantalope Salad Roasted Garlic Croutons and Green Goddess Dressing


I was inspired to make an old fashioned salad dressing called Green Goddess, when I was in the supermarket and saw the wonderful variety of beautiful fresh herbs on display.  I recall trying Green Goddess salad dressing when I was young and loving it, but have not had it in a very long time. It reminds me of a steak dipping sauce that my Mom used to make for me which was similar in color and ingredients.  I dont know what the steak sauce was called because, in my home it was always referred to it as "Amys steak Sauce" because I liked it so much.  Thats even the title on the recipe in the little cookbook my mom put together for me a long, long, time ago.  It included a combination of fresh parsley, capers, mayonnaise, chili sauce and a few other goodies.  Anyway, I came across that recipe the other day and that made me think about Green Goddess dressing.  I made a mental note to recreate it when I came across some beautiful herbs.  Herbs were a plenty, and it was about time for me to have a nice healthy salad for dinner, hence, the Smoked Turkey and Cantalope Salad with Green Goddess Dressing.

The salad was a combination of red and green leaf lettuce, thinly sliced vidalia onions (yay, its Vidalia onion season!), sliced English cucmber, smoked turkey from the deli counter and diced cantalope (I know it might sound  a bit odd, but you really should try it--cantalope in salad is so delicious!). 

I made croutons by cutting  a loaf of roasted garlic french bread into 1/2 cubes and placing them on a baking sheet.  I drizzled them with olive oil and sprinkled over salt and pepper.  They cooked in a 375 degree oven for about 10 minutes.  So good, they almost did not make it onto the salad!

For the Green Goddess dressing combine the following in a small food processor, 2 tablespoons mayonnaise, 2 tablespoons sour cream, 2 tablespoons red wine vinegar, 1 garlic clove, 1 teaspoon anchovy paste, handful of fresh dill, parsley, chives and a dash of hot sauce, salt and pepper.  Pulse until combined and serve immediately or refrigerate until ready to serve.

BUTTER BEANS LIMA BEANS AND POTATO KORMA

BUTTER BEANS OR LIMA BEANS: Lima Beans are also known as Butter Beans, because of their starchy yet buttery texture. Butter Beans or Lima beans have a delicate flavor that complements a wide variety of dishes. They are a very good source of cholesterol-lowering fiber and prevent blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. These beans are also rich in vitamins and proteins.

BUTTER BEANS / LIMA BEANS AND POTATO KORMA

Serves 6 Preparation time 45 minutes
Ingredients:

250 grams butter beans / lima beans, 2 onions chopped, 2 tomatoes chopped, 2 potatoes peeled and cut into quarters, 2 cloves, 3 cardamoms, 1 stick cinnamon, 1 teaspoon garlic paste, 1 teaspoon ginger paste, 2 tablespoon coconut paste, 1 teaspoon chillie powder, ½ teaspoon turmeric powder, ½ teaspoon coriander powder, ½ teaspoon spice powder / garam masala powder, Salt to taste
3 tablespoons coriander leaves chopped

Boil the butter beans and potatoes till tender in sufficient water with a little salt. Drain and keep aside. Heat oil in a pan and sauté the onions, cloves, cardamom and cinnamon for a little while. Add the tomatoes, garlic paste, ginger paste, chillie powder, turmeric, garam masala / spice powder, coriander powder, coconut paste, a little of the chopped coriander leaves and salt and stir fry till the oil separates from the mixture. Add the boiled butter beans / lima beans and potatoes and 1 cup water and simmer on low heat till the gravy thickens. Garnish with chopped coriander leaves. Serve with rice or chapattis

Soba Noodle and Steak Stir Fry Bowl


Usually, when I have leftover flank steak, I make fajitas and or steak sandwiches but lately I have been obsessed with Asian food.  I cant seem to get enough.  So I was excited to use up the remaining steak from Friday nights dinner in this Soba Noodle, Steak and Vegetable Stir Fry Bowl.  It was also the perfect meal for a Saturday night because I had been out shopping all day and didnt roll through the door until almost 8:00pm.  Starving and worn out, I was so happy I had something this easy, healthy, and delicious for dinner.

Soba Noodle and Steak Stir Fry Bowl
soba noodles
left over steak or chicken (sliced)
3 garlic cloves, minced
1 tablespoon fresh ginger, minced
1 carrot, shaved into long ribbons
1/2 cup cabbage, shredded
1 yellow pepper, thinly sliced
1 green onion, sliced
1/4 cup soy sauce
1 teaspoon hot Asian chili sauce
2 tablespoons rice vinegar
dash toasted sesame oil
chopped fresh cilantro

Cook, drain and rinse soba noodles according to the directions on the package.  In a large skillet or wok heat several tablespoons of canola oil and add garlic and ginger.  Cook until fragrant, but do not burn.  Add vegetables and stir fry until softened.  Add beef or chicken and noodles and cook until heated through.  Add soy sauce, vinegar, hot sauce and sesame oil.  Turn heat to low and warm through for approximately 5 minutes.  Serve with chopped fresh cilantro and green onion.

Jamaica Ginger Cake and Pear Trifles

I think it must be a rare person in Britain who has not eaten McVities Jamaica Ginger Cake.  Its a treat I remember from my childhood, there is something about the stickiness of a McVities Ginger Cake that is unequalled in any other shop bought cake.



So I was delighted when I was asked to review some of McVities cake bars and the said Ginger cake.  We got stuck into the Jaffa Cakes Cake Bars last night, they are very light and because they are individually wrapped would be more suitable than the packet Jaffa Cakes for lunch boxes and picnics.  The sponge in them is also softer than in the traditional Jaffa Cake, but there is still the organgy zing and the thin dark chocolate coating. Very nice indeed!

The Hobnob Flapjacks have the distinctive hobnob oaty taste and crunch with a thin layer of milk chocolate, perfect with a cup of tea or coffee.

The poor old Jamaica Ginger Cake had got a bit squashed in the post, but the slice I had with my afternoon coffee tasted just the same as always, rich, sweet and sticky with lots of ginger punching through.  I decided that as it was rather flattened, I would use it to make a dessert for tonights dinner.

Enter the pear lurking in the fruit bowl needing used up!

Jamaica Ginger Cake and Pear Trifles

makes 2

2 thick slices of McVities Jamaica Ginger Cake
1 ripe pear, peeled, cored and diced
2 tbsp dark rum or coffee liqueur
1 tbsp maple syrup
4 tbsp ready made custard
2 tbsp Greek yogurt or creme fraiche
A few split almonds (optional)

1. Crumble the McVities Jamaica Ginger Cake into the ramekins.
2. Place the chopped pear pieces on top of the cake.
3. Pour over the rum or liqueur and the maple syrup
4. Cover with the custard
5. Spoon the Greek yogurt or creme fraiche on top.
6. Decorate with almonds if liked.

Custard vermicelli

Ingredients
  • Milk 1 kg
  • Colored vermicelli 1 cup
  • Sugar 8 tbsp
  • Strawberry custard powder 1 tbsp heaped
  • Strawberry essence ¼ tsp
  • Cream ½ cup
  • Almonds and pistachio 2 tbsp
Method
  • Cook milk for 10 minutes, add vermicelli cook for 10 minutes, add sugar, lastly add in custard powder, dissolved with little cold milk, stirring continuously, remove when thick, cool, add essence and cream, serve chilled.

Souvlakia

Last night we had some more tasty Greek food. After making that Greek Chicken Salad a couple weeks ago, I was really wanting to make Souvlaki again. For those who are wondering, I got the whole scoop from Jeremy tonight about Souvlaki vs. Gyros.


Okay, so as you probably know, Jeremy served his mission in Greece. So he knows Greek food. One of the most common things to get in Greece is a gyro (pronounced "yee-ro" NOT "jy-ro"). A gyro refers to the type of meat which is cooked on a vertical spit that spins (like the word "gyroscope" - it spins around)around next to a heat source (oven kind of thing) and is then shaved off in thin slices. Anyway, so it is usually pork, lamb, beef, or chicken. In Greece it is served on a pita with tzatziki, red onion, tomato, and french fries. (Yeah, I missed the tomato and french fries).

Now, souvlaki on the other hand basically means a kabob and it is pork or chicken that is cooked on a skewer and then served on a pita with the same fixings as a gyro. So there you go. Both words technically refer to the meat I guess, not the whole thing, but theyre always served that way, so its kind of confusing. So what we had last night was souvlaki, not gyros. And it was delicious! I also made a greek salad, which is essentially this without the lettuce and chicken. Yum! This post just has the recipe for the meat, but Ive posted the recipes for the pitas and the tzatziki below.

Souvlaki

2 lbs. of chicken (you could use pork too), cut in 3/4 inch cubes
2 tsp. dried oregano
1/2 tsp. of freshly ground pepper
1 T. sea salt or kosher salt
2 T. fresh parsley, chopped
2 T. olive oil
juice of 1 lemon

Combine all ingredients in a ziploc bag. Turn to coat the meat evenly. Refrigerate for 6-8 hours.
Using 8 inch skewers, thread approximately 6 pieces of meat on each. This should make about 12 skewers. Grill the meat turning until well browned, about 15 minutes.
Serve on pitas with tzatziki, chopped red onion and chopped tomatoes.

Ingredients
  • Boiled chickpeas 1 cup
  • Fruit cocktail 1 cup
  • Finely chopped pineapple 3 slices
  • Chopped mint and coriander leaves ¼ bunch
  • Iceberg ½
  • Crushed black pepper 1tsp
  • Black pepper powder 1/2tsp
  • Lemon juice 2tbsp
  • Mayonnaise 5tbsp
  • Salt as required
Method:-
  • In a medium bowl mix together the fruit cocktail and the boiled chickpeas.Finely chop the iceberg lettuce and cauliflower florets and add them to the bowl.Add in 3 chopped pineapples,1/4 bunch finely chopped mint leaves and coriander, salt,1/2tsp crushed black pepper,1tso crushed black pepper,2tbsp lemon juice and 5tbsp of mayonnaise.Toss the salad and serve chilled.
