Gluten Free Coconut Flour Apple Cake Recipe

Gluten free apple cake recipe made with coconut flour
A lovely gluten-free apple cake with coconut flour.

The weather here has hula-hooped back into summer. I kid you not. It is ninety-seven degrees here in Little Russia, my West Hollywood neighborhood. As in 97. That's three shy of one hundred, Bubbe. In September. And what am I doing? Baking a cake. Heating up the kitchen. It figures.

As soon as I buy apples and start daydreaming about my favorite fall confections, imagining clear, cool evenings and Eva Cassidy's haunting rendition of Autumn Leaves, September turns sultry and sends me back into the closet, peeling off my straight legged jeans and Converse All Stars faster than Gordon Ramsay can mock sashimi.

So I may as well share my latest gluten-free cake recipe with you. I mean, I suffered extreme heat for it. I hot flashed till I was squishy for it. I panted and sweat until I resembled an over-ripe heirloom tomato. You know, dimpled and dented. Flabby. A little misshapen. And well. Squishy. Not a pretty sight.

Not that I'm trying to induce guilt or anything.

Not me.

Butter icing cake

Butter icing cake


Ingredients for sponge cake
  • Eggs 4
  • Flour 4 ounce
  • Caster sugar 4 ounce
  • Baking powder 1 tsp
  • Vanilla essence 1 tsp
Method
  • Beat eggs, gradually add in sugar until light and fluffy, add essence, sieve together flour and baking powder, carefully fold in the sieved flour, pour in a greased 8 inch round tin, bake on 180 degree C for 25 minutes, remove, cool, decorate with butter icing.
Ingredients for butter icing
  • Butter 8 ounce (unsalted)
  • Icing sugar 6 ounces
  • Vanilla essence ¼ tsp
  • Pink color few drops
  • Sugar syrup to moist cake
Method
  • Beat butter add icing sugar, beat till double in volume, add essence, divide the sponge cake in 3 layers, brush each layer of cake with sugar syrup, spread with butter icing, do this with all the layers, lastly cover whole cake with pink butter icing, put in the freezer till firm. Cover the sides of the cake with cake crumbs, decorate the top with pipe butter cream.

Texas Sheet Cake

I literally make this cake for every party, family gathering, and everywhere else that i go when i need to bring a dessert, and its gobbled up within minutes. Its the most moist sheet cake i have ever had, and of course its via the pioneer woman herself! Here is the recipe; its amazing!

Ingredients

  • FOR THE CAKE:
  • 2 cups Flour
  • 2 cups Sugar
  • ¼ teaspoons Salt
  • 4 Tablespoons (heaping) Cocoa
  • 2 sticks Butter
  • 1 cup Boiling Water
  • ½ cups Buttermilk
  • 2 whole Beaten Eggs
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • _____
  • FOR FROSTING:
  • ½ cups Finely Chopped Pecans
  • 1-¾ stick Butter
  • 4 Tablespoons (heaping) Cocoa
  • 6 Tablespoons Milk
  • 1 teaspoon Vanilla
  • 1 pound (minus 1/2 Cup) Powdered Sugar

Preparation Instructions

In a mixing bowl, combine flour, sugar, and salt.

In a saucepan, melt butter. Add cocoa. Stir together.
Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.

While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. Add the pecans, stir together, and pour over warm cake.

Cut into squares, eat, and totally wig out over the fact that you’ve just made the best chocolate sheet cake. Ever.

Healthy Carrot Cake Fat free cake recipe


This carrot cake recipe is healthy and delicious.

It contains no fat, uses molasses sugar and uses wholewheat flour.

This carrot cake is very spongy and moist and will keep fresh in a sealed tub or wrapped in plastic wrap/foil.

Ingredients for healthy carrot cake recipe

4 Tbsp Wholewheat Flour
1/2 tsp bicarbonate soda
2 1/2 Tbsp Dark Molasses sugar
1 1/2 large Carrots
2 large Tbsp Honey
1 large tsp carob powder
1/2 tsp cinnamon(optional)
1/4 tsp nutmeg
1 egg


How to make a healthy carrot cake


Place sugar into a bowl.



Add grated carrots and mix well.



Add honey.



Mix well.



Sieve all dry ingredients - keep your left over wheat bran from the flour.





Mix well




Whisk egg.



Add the egg to your carrot cake mixture.




Mix well then add the left over wheat bran.



Mix well.




Pour carrot cake mixture into a greased and floured cake dish.




Cook in a hot oven at 150C for approx 30 minutes.

Gently press the top of your cake if it is spongy it will be ready - or you can use a thin skewer to check if the cake is cooked.





Leave carrot cake to cool in the original dish or it will break when you take it out.



Decorate the top with flaked almonds, sultanas and dates.



Dust the top with powdered sugar for decoration.

Prize Winning Carrot Cake

This recipe again comes from my mother-in-law. It earned its title from when Jeremys aunt entered into the county fair baking contest and it won first prize. :) It really is very delicious. I had never been a huge carrot cake fan but every time Ive made this it has been fantastic and Ive loved every bite. In the past Ive made it in a 9x13 pan, but for Easter I made it in two 9" rounds and it worked great! Either way is delicious.


Carrot Cake

1 c. oil
3 eggs
2 1/4 c. sugar
2 c. grated carrots
1 20 oz. can crushed pineapple
1 tsp. vanilla
2 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 c. chopped walnuts or pecans (plus more for the topping if you like)

Mix together oil, eggs, sugar, carrots, pineapple and vanilla. Add the rest of the ingredients. Pour into a 9x13 pan or two 9" round cake pans that have been rubbed with butter and dusted with flour. Bake in 350 degree oven for about an hour for 9x13 or 40-45 minutes for 2 rounds. Cool before icing.

Icing
1 cube butter (1/2 cup)
1 8 oz. package cream cheese
1 lb. powdered sugar
1 tsp. vanilla
Few drops of milk until correct consistency

Mix until smooth and creamy and spread after cake cools. Sprinkle cinnamon on top or put some nuts on the top, if desired. Also spread in between the two layers if youre doing 2 rounds. This will make a ton so youll probably have some leftover.

Also, you can double the cake recipe and bake it in a jelly roll pan. There will be no need to double the icing however, because it makes plenty!

Jamaica Ginger Cake and Pear Trifles

I think it must be a rare person in Britain who has not eaten McVities Jamaica Ginger Cake.  Its a treat I remember from my childhood, there is something about the stickiness of a McVities Ginger Cake that is unequalled in any other shop bought cake.



So I was delighted when I was asked to review some of McVities cake bars and the said Ginger cake.  We got stuck into the Jaffa Cakes Cake Bars last night, they are very light and because they are individually wrapped would be more suitable than the packet Jaffa Cakes for lunch boxes and picnics.  The sponge in them is also softer than in the traditional Jaffa Cake, but there is still the organgy zing and the thin dark chocolate coating. Very nice indeed!

The Hobnob Flapjacks have the distinctive hobnob oaty taste and crunch with a thin layer of milk chocolate, perfect with a cup of tea or coffee.

The poor old Jamaica Ginger Cake had got a bit squashed in the post, but the slice I had with my afternoon coffee tasted just the same as always, rich, sweet and sticky with lots of ginger punching through.  I decided that as it was rather flattened, I would use it to make a dessert for tonights dinner.

Enter the pear lurking in the fruit bowl needing used up!

Jamaica Ginger Cake and Pear Trifles

makes 2

2 thick slices of McVities Jamaica Ginger Cake
1 ripe pear, peeled, cored and diced
2 tbsp dark rum or coffee liqueur
1 tbsp maple syrup
4 tbsp ready made custard
2 tbsp Greek yogurt or creme fraiche
A few split almonds (optional)

1. Crumble the McVities Jamaica Ginger Cake into the ramekins.
2. Place the chopped pear pieces on top of the cake.
3. Pour over the rum or liqueur and the maple syrup
4. Cover with the custard
5. Spoon the Greek yogurt or creme fraiche on top.
6. Decorate with almonds if liked.

Bundt Cake Кекс Topm

An easy cake to make up from scratch. It is the simplest, great tasting cake Ive ever made. If you have guests coming over and you need to make something fast. This is the cake to make. Usually these ingredients are always on hand.

Ingredients:
5 eggs
1 1/2 cups sugar
1 cup sour cream
1/2 stick butter 
1/2 tsp baking soda pour 1 tsp vinegar on top
1 tsp vanilla 
2 cups flour
3/4 cup raisins


First before starting put raisins in boiled water. This will make it soft.
Mix egg with sugar for 7-10 min until fluffy.
Put melted butter and sour cream.
Add baking soda with vinegar. Mix
Add flour, mix and add raisins. Mix
Pour in the oiled baking dish.
Bake for 35-45 min on 325F.
 Enjoy with coffee, tea, milk.

KENTUCKY BUTTER CAKE

Im not sure where I saw this cake for the first time, but I remember finding web page after web page saying how great this recipe was, so I knew I had to try it.

So, today was the day and all I have to say is: Holy Wack-a-Moley (as my grandchildren would say)it is delicious. Even picky-picky husband has had several pieces of cake today. 

It has a rich and moist butter-rum flavor and after its baked (and still hot) you poke holes into the cake and drizzle over a butter-rum flavored syrup.Im talking serious flavor here!!

The syrup finds its way down into the cake and the result is pure heaven. I hope you try it.

1 cup butter (room temperature)
2 cups sugar
1 teaspoon rum extract
1 teaspoon vanilla extract
4 eggs
3 cups all purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk

Grease and flour a 10" Bundt pan and preheat your oven to 325°F.
Beat the butter, sugar and extracts on medium high speed for about 3 minutes, scraping down the bowl once or twice.

Add the eggs, one at a time (beating after each) and once they are all included, beat for about another minute or so.

Mix the flour, baking soda, baking powder and salt together and add it to the butter mixture, alternately with the buttermilk (I added it in thirds).

This batter is nice and thick, so spoon it into the prepared Bundt pan and level out the top of the batter.

Bake at 325° for one hour or until a toothpick tests clean. My electric oven took exactly one hour.

Remove from oven and DO NOT REMOVE CAKE FROM THE PAN YET. Poke holes into the hot cake. I used the sharp end of my meat thermometer and it left a nice size hole. Dont poke the holes all the way down to the bottom of the pan, just about 3/4 of the way. I poked about 3 holes across, every two inches.  Drizzle syrup into holes.

SYRUP
3/4 cup sugar
1/3 cup butter
3 tablespoons water
1 teaspoon vanilla extract
1 teaspoon rum extract

Heat this until sugar dissolves and little bubbles form around the edge of the pan, but dont boil.

After you drizzle the syrup over the cake (while its still in the pan) let the cake cool in the pan for a couple of hours before you turn it out onto a serving plate (it wont stick to the pan).

NOTE: Next time I make this cake I plan to double the syrup and use half of it as instructed above, but the other half I will brush onto the cake after it comes out of the pan.  It dries  nice and shiny, so it will make a wonderful (thin) glaze.

Black Forest Cake

Black Forest Cake


Ingredients
  • Eggs 4
  • Castor sugar 4 ounce
  • Flour 3 ounce
  • Coco powder 1 ounce
  • Baking powder 1 tsp
  • Vanilla essence 1 tsp
For icing
  • Fresh cream 12 ounces
  • Icing sugar 2 ounces
  • Canned cherries as required
  • Tinned peaches 1 cup
  • Chocolate syrup for decoration
  • Grated Chocolate for decoration
Method
  • Beat eggs with castor sugar till light and fluffy, add essence. Sift together flour, coco and baking powder. Very lightly fold the sifted flour into beaten eggs. Grease two 8 inches sandwich pans with oil. Line with greased butter paper. Pour cake batter in this. Bake in a pre heated oven on 180 degrees for 25 minutes. Removed and cool. Cut sponge in 2 halves. Brush with fruit syrup. Spread with whipped cream. Top with peaches and cherries. Cover with second piece of sponge. Again brush with syrup. Continue till all three layers have been added in the same way. Now put the last layer of sponge on top. Apply whipped cream on sides and top, drizzle with chocolate syrup on top and sides, decorate with cherries.

Bunco Cake



if you need a chocolate fix this is it! I know that this is a pretty well known recipe and that there are many versions, but this is my favorite one. Besides anything that calls for loads of chocolate and a can of sweetened condensed milk is worthy of my blog!


Bunco Cake

1 box chocolate cake mix (+ whatever it calls for on the back)

1 can sweetened condensed milk

1 jar hot fudge sauce

1-8 oz container of cool whip

4 Skor* Bars, crushed (or Heath Bar)


Make and bake cake according to box directions. As soon as it comes out of the oven, poke holes with the handle of a wooden spoon all over the cake. Pour sweetened condensed milk over the top. Let cool completely.


Next spread fudge over the cake, and put in the fridge to set.


When it is cool, spread coolwhip over the top and then top with crushed score bars. Refrigerate leftovers.

I like this cake better the next day as the cake gets more moist.


I have made this cake and it is so good. Always a hit at parties and with family dinners.

Diwali Delicacy Eggless Mava Cake

This is another Another Subcontinent food forum inspired recipe. Food enthusiasts on the forum have been discussing the mava / mawa cake to shreds [or pieces] rather. Being in Bombay, close to many Parsi bakery shops, mava cake is really no big deal. It is considered a most Plain Jane cake, and I have seen kids who wont even consider this a cake, for there is nothing fancy-schmancy about it. Generally sold as cup cakes, packed in batches of six, these make a lovely tea time treat.

Merwans, a Parsi Bakery in Grant Road (Bombay) - is famous for its Mava cake and the foodies on the forum were in the quest to reproduce the same magic in their kitchens. Ravum provided a recipe for an eggless version using condensed milk, khoya (solidified milk), milk, flour and butter. Khoya is also called mava, and thats how this cake gets its name. Since I was on a cooking low, I asked Raaga if shell give me company and support in making this as a joint blog project. Even though she would be making it in Gurgaon and me in Bombay, it seemed like a great support to me and a fun thing to do. Being the great sport that she is, she managed to make it today and we decided to blog about it together.


[Recipe in Ravums words]

Ravums Eggless Mava Cake

Mava Cake

Wet Ingredients
1 tin Milkmaid (400 gms)
50-75 gm butter (1/2 to 3/4 slab of a 100 gm of Amul butter)
200 g mava (khoya)
1/2 cup milk (You can use water, but you the cake browns better with milk)
1/4 cup milk (this is to be used if while mixing the wet and dry ingredients, if your batter is too thick).

These must be heated together till butter melts and the mix is homogeneous. Cool it to room temperature.

Dry Ingredients
1.5 cups (US cup) maida (all-purpose flour)
1 tsp baking powder
2 cardamom (peel and powder the seeds)
Pinch of saffron - pound with a pestle with a bit of sugar
Cashew nuts

Sift the maida and baking powder three times (for volume). Add the cardamom, saffron, and cashew nuts.

Whisk the dry and wet ingredients together. Use the 1/4 cup of milk if the batter is too thick. The final consistency should be that of idli batter, or the besan batter used for making pakoda. Bake in a greased pan till light brown on top. [I baked at 175 C for 20 minutes in a 6 cup tube pan]
