Apple Hand Pies – Crimping is Easy

I’ve been playing around with a new pastry dough, and figured I’d use it as an excuse for a little demo on turnovers, or “hand pies” as the hipsters are calling them.

I’ll unveil the new “buttercrust” dough next week, but this particular video is not about the pastry, or the filling, it’s about the fairly basic method for folding and crimping one of these up.

As you’ll see, it’s not exactly a complicated procedure. In fact, I can’t imagine your aunt is going to be too thrilled to know that you’ll be able to now match her crimp for crimp. Once you have the outside down, what goes inside should be the least of your worries.

I went for a very soft, apple-saucy, jam-like filling, which turned out very well, but literally any of your favorite pie fillings, both sweet and savory, will work. If you do make an apple version, and want to really blow some minds, top your filling with a thin slice of sharp cheddar. It’s special. I hope you give this easy technique a try soon. Enjoy!


For 4 Apple Hand Pies:
about 1 pound pie dough, divided into 4
egg wash (1 egg beaten with 2 tsp milk)
granulated sugar as needed
For the apple filling:
2 tbsp butter, browned
2 or 3 green apples
1/4 tsp salt
1/4 cup white sugar
2 tbsp brown sugar
1 1/2 tsp cinnamon, or to taste
1 or 2 tsp of water if needed

Easy and Tasty Egg curry With Tomato and Tamarind

My favorite combo for rice...

Ingredients:
Eggs-2
Onions-chopped-1cup
Tomatos-chopped-1cup
Green peas-1/4cup
Green chilles---------2
chopped ciliantro---2t.s
Cumin seeds--------Few
Mustard seeds------Few
Chana dal-----------1/4ts
Urad dal-1/4ts
Turmeric------------Pinch
Salt-----------------To taste
Chilli powder------1/2t.s
Coriander powder-1/2ts
Cumin powder-1/2ts
Garam masala-1/4ts (optional)
Red chilli----------1
vegetable oil-------2ts
Tamarind-lemon size ( small)

Method:
  1. Boil Eggs and remove shell, keep them aside.
  2. Heat a thick bottom non stick pan and add 2ts of vegetable oil.
  3. Add Cumin seeds + Mustard Seeds + Red chili + chana Dal + Urad dal and wait until they splutter.
  4. Add onions + green chilies and saute until they get half cooked. Mean while soak tamarind in water.
  5. Add tomatos and cook under medium flame until they get cooked completely.
  6. Squeeze out tamarind water from the soaked tamarind and add this water to the cooking mixture.
  7. Add all curry powders chili powder+salt+coriander powder+cumin powder and cook for 5min under medium flame.
  8. Add water at this point if required.
  9. Add garam masala at the end if you prefer it spicy. 
  10. Now take the boiled eggs and make slit with knife on the top and drop them in the curry and turn off the flame.
  11. Finally garnish with cilantro.

This recipe goes well with bagara/ biryani / plain rice.

A Quick and Easy Cassoulet Recipe – Pork Beans with Benefits

Of course you can’t make a real cassoulet in an hour, but you can make this very acceptable cheater version, and as long as you manage expectations, you’re in for a great, cold-weather meal.

Real cassoulet is an involved process, with several days of prep just to make the various meats served in this rustic bean casserole. Once everything is prepared, the dish bakes for hours, during which time the ritualistic crust forming and re-forming occurs.

Buttery breadcrumbs are scatted over the top, and when they form a crusty, golden brown layer, they’re pushed down into the bubbling mixture, and new crumbs applied. This is done several times, creating the dish’s signature texture. A creamy, aromatic, not-too-wet-or-too-dry bean mixture into which is suspended the chunks of succulent meat.

Here, we’re taking lots of short cuts. Chicken thighs replace the classic, and time-consuming, duck confit; canned beans replace dried; and bacon serves as a convenient substitute for other, more involved smoked pork options.

While it will be tempting to dig right into this as soon as the final “gratin” is formed, please follow the advice in the video, and let your cassoulet rest in the hot oven for 15 minutes. This will allow the beans and buttery crumbs to absorb the last of the excess liquid, and make for a better texture.

By the way, please adjust your seasoning depending on the sausage used. Mine was plenty garlicky, so I didn’t add any additional cloves. You’ll also have to taste and alter the salt, depending on whether your bacon and sausage shared enough with the rest of the ingredients. I hope you give this hearty, cold-weather classic a try soon. Ingredients for 4 large portions:
4 oz bacon, sliced
8 oz spicy, garlicky, smoked pork sausage, sliced
12 oz boneless skinless chicken thighs, cubed
1 onion, diced
salt and pepper to taste
2 cups chicken broth, or as needed
2 (15-oz) can white beans, drained, rinsed
1 1/2 tsp minced fresh rosemary
1 1/2 tsp minced fresh thyme
cayenne to taste
4 tbsp melted butter
1 cup plain breadcrumbs
1/2 cup finely grated Parmigiano-Reggiano cheese

EASY ENCHILADA CASSEROLE

This is a great comfort food classic that I turned into an easy, quick fix casserole. You can easily double or triple the ingredients for a big crowd. The flavors are great and it reheats extremely well.

MEAT FILLING
1 pound lean ground beef
1 teaspoon salt
1 tablespoon dry onion flakes
3 teaspoons chili powder
1 teaspoon ground cumin
½ cup water

4 oz. mild green chilies (I use Ortega brand)

Brown the ground beef and drain. Return to pan and add everything else, stir well and let this simmer for about 10 minutes, remove from heat and set aside.
 
ENCHILADA SAUCE (1) 6 ounce can tomato paste
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon ground cumin
2 cups water

Mix well and simmer for about 15 minutes...set aside

ASSEMBLY

In a greased 9 x 13 pan, place TWO layers of soft corn tortillas; cover with a little of the enchilada sauce. Space large spoons of the meat filling 2" apart on top of the sauce, and sprinkle with a little cheese like this:




 
 Top with TWO more thickness of soft corn tortillas that have been cut into diamonds, like this:

Ladle some more sauce over the soft tortilla diamonds, then repeat with the meat and cheese. Bake in a preheated 350 oven for about 35 minutes. You can make this early in the day and then just pop it into the oven at dinner time. If you do that, add about 10 minutes to the total baking time.

EASY PLAY DOUGH A GREAT WEEKEND PROJECT FOR THE KIDS or GRANDKIDS

Ive tried many play dough recipes over the years and this one is, by far, the best yet. It is made with common pantry items and is ready to play with, literally, in a few minutes!! Its soft, pliable and super easy to work with. When the kids are done with it, recipe says to keep it in an airtight container in the fridge, but with all that salt, I doubt that is necessary.
EASY PLAY DOUGH
2 cups all purpose flour
1 cup table salt
2 cups water
4 teaspoons cream of tartar
2 tablespoons vegetable oil
food coloring (see note)

Put everything in a large, heavy bottomed, sauce pan and cook (stirring) on medium high until this comes away from the sides of the pan and thickens to the consistency of Play Doh (it just takes a couple minutes). Make sure you have a very sturdy wooden spoon to stir this with and it takes a little elbow power at the very end.

Remove the cooked dough from the sauce pan and knead it for a minute or so until it becomes smooth. I did this kneading stage with my stand mixer which cooled the dough down almost immediately (a good thing).

If you want the play dough to be all the same color, add the food coloring with the water before cooking. I wanted to try two colors, so I divided the cooked dough in half and put half in my stand mixer (for the kneading step) and I added food color paste to the dough while the machine was kneading the dough (this step can be done by hand, but I would suggest you use rubber gloves so you dont get green fingernails).

My one concern with using the concentrated food color paste was that it would come off on my hands when I "played" with the final product...it did not!! This is a great weekend project for the kids!!

NOTE: The colors in this photo were obtained by using Wilton frosting color paste, which is very concentrated color. You can use ANY food coloring (or NO food coloring) that you like.
