Gluten Free Coconut Flour Apple Cake Recipe

The weather here has hula-hooped back into summer. I kid you not. It is ninety-seven degrees here in Little Russia, my West Hollywood neighborhood. As in 97. That's three shy of one hundred, Bubbe. In September. And what am I doing? Baking a cake. Heating up the kitchen. It figures.
As soon as I buy apples and start daydreaming about my favorite fall confections, imagining clear, cool evenings and Eva Cassidy's haunting rendition of Autumn Leaves
So I may as well share my latest gluten-free cake recipe with you. I mean, I suffered extreme heat for it. I hot flashed till I was squishy for it. I panted and sweat until I resembled an over-ripe heirloom tomato. You know, dimpled and dented. Flabby. A little misshapen. And well. Squishy. Not a pretty sight.
Not that I'm trying to induce guilt or anything.
Not me.

Scrumptious Apple Pie
This was a post that we had posted a while ago- we got it from Mia&Jilly. With thanksgiving coming up fast- If you need to bring a pie- dont buy one make this one. You wont regret it! I have made it several times and plan on bringing it to our thanksgiving dinner. Its really the easiest pie ever to make!!!

Scrumptious Apple Pie. Its a cinch!
Does the thought of making a pie send you into involuntary convulsions or make you break into a cold sweat? Well Im about to change your life....for reals. This is the easiest pie on the planet, and the best thing, its absolutely delicious!

Crust:
1 1/2 c. flour
1 1/2 teaspoons sugar
teaspoon salt
1/2 c. oil
2 Tablespoons cold milk
Mix together with your hands, and press into the bottom of a 9" pie plate.
Filling:
4 c. thinly sliced apples, peeled and cored. (I used a combo of Fuji and Granny Smith. Mixing two different varieties of apples in a pie always tastes better. My hint to you...actually mommys hint to you.)
1 1/2 c. sugar 2 Tablespoons flour
1 teaspoon cinnamon
Mix well and mound into crust. It will be really full. Dont worry, the apples cook down a bit and it will be perfect.
Topping:
1/2 c. flour
1/2 c. sugar
1/2 cube of butter
Mixture should resemble coarse crumbs. Sprinkle on top of the pie. Place pie in a brown paper grocery bag, thats right, just a regular brown, paper bag, then put the bag on a big cookie sheet.

Place in an oven preheated to 350 degrees. Bake for 1 hour, 40 minutes.

Serve with whatever you like best.....a tall glass of milk, vanilla bean ice cream, or my personal favorite, heavy whipping cream.
*Note-As I put it in the oven, I realized the bag was a little too close to the heating element. Since I really wasnt in the mood for a kitchen fire, I pulled it back out and stapled the back down a bit. I would suggest you do the same, unless you look really cute and would like a friendly visit from your local fire fighters....

Apple Hand Pies – Crimping is Easy
I’ll unveil the new “buttercrust” dough next week, but this particular video is not about the pastry, or the filling, it’s about the fairly basic method for folding and crimping one of these up.
As you’ll see, it’s not exactly a complicated procedure. In fact, I can’t imagine your aunt is going to be too thrilled to know that you’ll be able to now match her crimp for crimp. Once you have the outside down, what goes inside should be the least of your worries.
I went for a very soft, apple-saucy, jam-like filling, which turned out very well, but literally any of your favorite pie fillings, both sweet and savory, will work. If you do make an apple version, and want to really blow some minds, top your filling with a thin slice of sharp cheddar. It’s special. I hope you give this easy technique a try soon. Enjoy!
For 4 Apple Hand Pies:
about 1 pound pie dough, divided into 4
egg wash (1 egg beaten with 2 tsp milk)
granulated sugar as needed
For the apple filling:
2 tbsp butter, browned
2 or 3 green apples
1/4 tsp salt
1/4 cup white sugar
2 tbsp brown sugar
1 1/2 tsp cinnamon, or to taste
1 or 2 tsp of water if needed
1 or 2 tsp of water if needed

Smoked Chicken Apple Sausage with Cider braised Cabbage and New Potatoes – A delicious reminder that it’s not winter…yet
As you’ll hear me say in the clip, this really is a great cold weather meal. But, instead of waiting 6 months to post it, I thought I would put in on the blog now for several good reasons. First of all, while it is a classic winter dish, it’s delicious anytime of the year, and the ingredients are easy to find no matter what the season. Secondly, summer cooking is all about quick and easy, and this one-dish recipe definitely qualifies. Remember “braised” doesn’t always mean slow-cooked. Lastly, what a great reminder to enjoy every wonderfully warm second of this summer, because before you realize it you’ll be raking leaves in a sweater.
One quick note regarding shopping for chicken apple sausage. Due to the recent increase in popularity of these chicken and turkey based sausages; many larger grocery stores may stock as many as 4 or 5 different brands and varieties. But, be sure to check the labels! Some brands (usually the less expensive ones) will have just as much fat as the classic pork-based sausages they’re suppose to be a healthier alternative too.
Ingredients:
4 smoked chicken apple sausage (1 pound)
1 1/2 tsp butter
1 tsp olive oil
3 cloves garlic
1 pound new potatoes (I like Yukon gold or red)
1 yellow onion
3 cups apple cider or juice
1 green cabbage, shredded (about 1 1/2 pounds)
salt and pepper to salt
Dijon mustard and fresh parsley to garnish

The all Indian Apple Cheesecake
TemptationApples in bakes come a close second for me after bananas. I have some three regular apple cake recipes that I like to use when I find some apples languishing in the refrigerator and Im in a good mood to rescue them from dying a slow death. However let me not talk of morose things like death, when theres such an interesting recipe to share with you.
One of my best friends is a Marwari and once again I must say the Marwari ladies are a very creative lot - often indulging in very innovative pursuits, not excluding cooking. This recipe was passed on to my friend by her relative - an Indian version of an apple cheesecake or you can call it an apple pie. You can put this together if you have 15 minutes, 3 apples and a litre of milk on hand. Im not kidding you, and I find this taste far far superlative to the regular apple pie which is not only more labour intensive but also flour & calorie intensive. If you serve this up at your next party, I can guarantee that your guests may forget you but will never forget the taste of this absolutely yummy piece of cheesecake. Ive made this just once which was quite a few months ago - but I cant wait to make it again.

Ingredients
200 grams Digestive Marie or McVites biscuits
1 tbsp melted butter or ghee
3 apples - peeled, cored, sliced ( I used Shimla apples)
1 litre regular cows milk - turned into paneer*
2 tbsp or more brown or regular sugar
1 tsp cinnamon powder
Directions
Preheat oven at 200 C.
Crush the biscuits coarsely in food processor along with melted butter or ghee. Line this on the bottom and sides of a pie dish, pressing firmly with your fingers or the bottom of a cup / glass.
Place this in preheated oven for 10 minutes. Remove and let cool till the filling is ready.
Next, puree the sliced apples and when its almost done, add the paneer, cinnamon and sugar to get a smooth puree of apple and paneer. Add sugar depending on sweetness of apples.
Turn this puree into the baked crust, smoothen out and bake for 45 minutes or so at 180 C - until top is golden and the cake is nearly firm.
Cool in the refrigerator for a few hours and serve as it is or with some vanilla ice cream.

Dessert is served
* Heat one litre cows milk till it comes to a boil - turn flame to sim. Add up to one tbsp vinegar or 1/2 cup curds to curdle the milk. Stir around until the separated water (whey) is clear and light green. Filter out the solids, pressing out as much liquid as you can. The filtered soild is the paneer to be used in the recipe.
