Gluten Free Coconut Flour Apple Cake Recipe

The weather here has hula-hooped back into summer. I kid you not. It is ninety-seven degrees here in Little Russia, my West Hollywood neighborhood. As in 97. That's three shy of one hundred, Bubbe. In September. And what am I doing? Baking a cake. Heating up the kitchen. It figures.
As soon as I buy apples and start daydreaming about my favorite fall confections, imagining clear, cool evenings and Eva Cassidy's haunting rendition of Autumn Leaves
So I may as well share my latest gluten-free cake recipe with you. I mean, I suffered extreme heat for it. I hot flashed till I was squishy for it. I panted and sweat until I resembled an over-ripe heirloom tomato. You know, dimpled and dented. Flabby. A little misshapen. And well. Squishy. Not a pretty sight.
Not that I'm trying to induce guilt or anything.
Not me.
So go ahead. Enjoy this new apple cake recipe. Share a slice or two amongst yourselves. Don't worry about me here in hot little WeHo. Really. Go. Bake. Discuss. Have some coffee.

COCONUT RUM SUGAR THINS
This quick and easy cookie is a real winner! Great for any occasion; it stays chewy for days (if they last that long).The coconut and rum extract is a GREAT flavor combo!!¾ cup butter, room temperature
1 cup white sugar
1 egg
2 tablespoons corn syrup (dont leave out)
2 teaspoons coconut extract
1 teaspoon rum extract
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda

Beat the butter, sugar, egg, corn syrup and extracts with electric mixer, until fluffy. Add the dry ingredients, mix well and refrigerate, covered, for an hour. (I skip the chill step).

Roll dough into 1" balls and roll them in white sugar. Bake them on parchment paper at 350F for 12 minutes.
NOTE: The recipe calls for chilling the cookie dough, which would make it easier to roll, but I never do that. I just gently roll them in 1" balls, roll them in white sugar, flatten them slightly with a flat bottomed glass and bake immediately on parchment paper.

Creamy Detox Soup Recipe with Coconut Milk

It's mighty tough for a sensitive soul (prone to bouts of worry) to cope with all the mishegas in our overheated plugged-in self-promoting culture. To find a little respite. A little simple nourishment. That is why I am sharing another soup recipe. Just in case there is a kindred spirit out there in need of a bowl of creamy veggie comfort. A gluten-free vegan detox soup worthy of Peter Rabbit's
And bunnies aren't known for twerking on YouTube, or filibustering, or bullying, or, in general, wreaking havoc. Unless you count Peter's root vegetable stealing. Or (my sons' favorite) mischievous Max and his devouring love of chocolate chickens (have you read the Max books?)
Bunnies are ostensibly devoted to a milder temperment.
And qualities like kindness and beauty and gentleness.
Traits easily trampled in our thundering, gun toting, zombie killing 3-D pyrotechnics loving culture.
So it seemed only fitting I cook up a batch of vegan soup today as fresh and non-toxic as could be.
Creamy, good-for-you soul food.
